I recently visited my family in Colombia, my dad gave me this awesome recipe for carrot cake.
Ingredients:
2 1/2 cups of carrot cake pulp (if you have a juicer is ideal if not, you can grate the carrots make sure to use a cheesecloth to squeeze the juice)
1 Teaspoon of baking powder
cinnamon to taste
4 whole eggs
1 teaspoon of lemon juice
Stevia (optional)
1 Tablespoon of coconut oil
Preparation:
Mix all the ingredients and have a nice thick paste. make sure the pulp looks all wet.
Place the mixe in a mold and put in the oven at 400 degrees for 1 hours.
Let it cool down and then keep refrigerated.
It is amazing!! great option for a healthy breakfast, or a mid afternoon treat with a cup of Coffe.

you can always add one ripe banana to the mix, grate zucchini, rasins, walnuts or almonds.
