eggs and sweet potatoesmakes 2 serving

 

1 medium sweet potato, peeled and grated

1/4 cup grated parmesan cheese (optional)

2 TSP fresh thyme

salt and pepper to taste

3 TSP coconut oil

1 cup of sliced of mushrooms

2 large eggs

1 cup of baby spinach or baby kale

 

1. In a large bowl toss together sweet potatoes, parmesan, thyme salt and pepper

2. Heat 1 teaspoon of oil and cook mushrooms till softened (about two minutes)

Remove the mushrooms and add the sweet potatoes, cook until sweet potato is tender and begins to brown (abbot 5 minutes)

3. Remove sweet potatoes from the skillet and add the rest of the oil and cook the eggs  (fried egg style)

4. place the sweet potatoes in two plates and add the mushrooms on top of the sweet potatoes adding a cup of baby greens (optional) and place the fried egg on top.

You can add hot sauce if you like!
