Cherry Tomatoes and Goat Cheese Fritatta

  • 3  omega-3 or pasture-raised eggs
  • 1 cup Almond Milk (Unsweetened)
  • Himalayan Salt
  • Ground black pepper to taste
  • 1 tsp olive oil or coconut oil
  • 1½ cups cherry tomatoes
  • ¼ cup fresh dill chopped
  • 2 Tbsp crumbled goat cheese (optional)

Directions:

Preheat oven to 350ºF.

In a medium bowl whisk together the eggs, almond milk salt and pepper. Add in the tomatoes, dill and goat cheese.

  • Grease pan with olive oil or coconut oil. Pour the mixture into the prepared  pan and bake for 25-35 minutes or until a toothpick inserted into the middle comes out clean.
