I love to eat healthy and enjoy sweets once in a while, but sometimes that combination between health and sweet is hard to find. There are not too many options out there, that is why I’ll love to share this recipe with you.
What do you need:
- 1/2 cup of almond flour
- 1/4 tsp baking soda
- 1 tbsp pumpkin spice
- 1 tbsp cinnamon spice
- 6 eggs (can be whole eggs or egg whites)
- 1/2 cup of : coconut oil or macadamia oil
- I use Stevia drops, you can use honey or maple syrup (to taste)
- 1tsp vanilla extract
- 1 apple, cored, peeled and grated
- 1 1/2 cups of carrot grated
- 1/2 cup of walnuts chopped
- 1/2 cup pitted dates chopped
- 1/4 sunflower seeds
- a dash of sea salt
How to mix it?
Preheat your over at 350F.
Mix all the ingredients and blend very well using an electric blender.
The mixture needs to be a little soft, not too runny, not too thick
Place this mixture inside your baking dish, and bake for 30 min. do the toothpick trick to make sure the inside is totally cooked.
Let cool off and enjoy!! please keep refrigerated all those fresh ingredients will spoil very fast if you keep it outside.
